As a waitress what are some effective ways to persuade customers to buy desserts and/or alcoholic drinks?
I’m going to start waitressing at a new upscale restaurant and managers speak a lot about how wine is one of the main features of the restaturant. Mangers also speak a lot about upselling menu items. So I want to know what are some great ways to do this.
Always offer.
Lots of people don’t think about all their options. Pick a favorite menu item from every category and offer one or two to every table (“Are you interested in any desserts today? The cheese cake is very good.”) Make sure you offer each category at the appropriate time (Drinks and appetizers when they sit down, salads with their dinner, dessert and coffee at the end.)
Know your restaurant’s deals. Can they get a salad with their entree at a reduced price? Mention it. Is there a price fix? Make sure you let them know. People like deals and will often say yes if you offer them one.
Make sure you know about the food and drinks that your restaurant offers. Ask the managers if you’re allowed to try the food if you don’t know what it’s like. If you can give honest, informed and personal opinions when asked, your customers will appreciate it.
And finally, from a customer’s POV, remember that no means no. If the customer says they don’t want dessert, don’t try to pressure them into it. It’s annoying, regardless of what your managers say. Happy customers are repeat customers and repeat happy customers tip better.
